Build all ingredients (except stout foam) over ice in a mixing glass. Briefly stir, then strain into a coupe. Top with oatmeal stout foam and garnish with a dehydrated orange slice or sprinkled oats.
*Toasted Rye Syrup
Toast rye in a saucepan until fragrant (not burnt). Add sugar and water and bring to a boil. Let simmer for 15 min. then strain into a sealed container. Store in the refrigerator for up to one week.
**Oatmeal Stout Foam
Bring beer and sugar to a boil, then reduce heat and simmer for 30 min. or until volume has reduced to a third. Let cool and store in a sealed container in the refrigerator for up to one week. To create foam, pour into an aerated can and spray
