Add all ingredients to a shaker without ice. Shake very well until egg white becomes frothy. Add ice and shake briefly. Double strain into a footed coupe and garnish with a thyme sprig.
1.5 oz London Dry
2 oz Cantaloupe Mix*
0.5 oz lime juice
1 egg white
Pinch of sea salt
Torn thyme leaves
1 cup freshly juiced cantaloupe
1/4 c diluted agave (1:1 ratio of agave : water)
Combine cantaloupe juice and agave, and store in a sealed container in the refrigerator for up to one week.
