Add all ingredients to a shaker with ice and shake well. Strain into a tall Collins glass filled with fresh ice and top with Topo Chico. Garnish with two cherries.

Add all ingredients except vinegar to a pot and bring to a boil. Simmer for 15 minutes, let cool, and finely strain into a sealed container. Stir in balsamic vinegar and store in the refrigerator for up to one week.
