Island Hopper

Add all ingredients to a shaker with ice and shake well. Double strain into a coupe glass that has been spritzed with a sea salt spray. Garnish with a dehydrated pineapple flower.

Ingredients

  • 1.5 oz Sunday Gin
  • 1 oz pineapple syrup
  • 0.5 oz lime
  • 0.5 oz coconut milk
  • 1 dash smoked bitters

*Pineapple Syrup

  • 1 c freshly juiced pineapple
  • 1 bunch lemongrass (5-6 stalks), thinly sliced
  • 1 c sugar
  • 1 c water

Bring all ingredients to a boil. Reduce heat and let simmer for 15 minutes. Let cool and strain into a sealed container. Store in the refrigerator for up to one week.
