Add ingredients to a shaker with ice and shake briefly. Strain over fresh ice into a tall Collins glass. Top with tonic water and garnish with a watermelon wedge, fresh mint sprigs and pink peppercorns.
1.5 oz London Dry Gin
1.5 oz watermelon mix*
Torn mint leaves
Pinch of pink peppercorn
Tonic water (preferably East Imperial Burma Tonic)
1/4 of a watermelon
1/4 lb lemongrass
Juice watermelon and lemongrass. Mix together and store in a sealed container in the refrigerator for up to one week.
